2. Manage the fire correctly

  • Medium heat   to start, then  low

  • Too strong → sticky and burning polenta

  • Too weak at the beginning → poor connection

3. Season appropriately

  • Add salt  at the beginning  , never just at the end.

  • Taste at the end of cooking and adjust seasoning.

4. Master the texture

  • Polenta  thickens while resting

  • Always keep it  a little looser  than desired.

  • Add only  hot liquid
